Homemade Brown Sugar Chicken

You'll need:
2 chicken breasts, fresh or defrosted
1 tbsp maple syrup
1 tbsp plum sauce
1/3 cup brown sugar
1/4 cup white sugar
1/4 onion, chopped
Olive oil

1. Prepare chicken breasts in pyrex dish or casserole. Preheat oven to 400 degrees.
2. Drizzle olive oil around and on chicken. Drizzle all of the syrup and plum sauce over the chicken. Put half of the brown sugar and half of the white sugar on the chicken.
3. Dip chopped onion lightly in white sugar and then throw in the pan.
4. Bake for 15 minutes.
5. Flip chicken, pour on the other halves of sugars. Mix up the onions in the pan.
6. After another 15-20 minutes, chicken should be done. Check inside of chicken to be sure!

Famous Banana Chocolate Chip Muffins

My epic and very famous recipe has been in my family for more than 20 years. I think. I can't verify that. I suggest using a mixmaster or a very good standalone mixer. This can be done with a wooden spoon or whisk, but it is difficult. Yields a dozen muffins. I suggest doing a double batch.

You'll need:
1 1/2 cups Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
2-3 Very Ripe Bananas
1 Egg, well beaten
1/3 cup Oil
1/2 cup Sugar
1 tsp Vanilla Extract
Semi-sweet chocolate chips

1. Preheat oven to 400 degrees. 
2. Mash bananas. Add sugar and oil, and beat well. 
3. Add egg and vanilla and continue beating.
4. Remove from beater, mix in baking soda, baking powder, and flour.
5. Mix in chocolate chips, until in the batter they're all about less than inch apart from each other.
6. Spoon into greased or muffin-cupped muffin tins.
7. Bake for 14-17 minutes or until dark-gold brown.

Fresh Raspberry Salsa

You'll need:
1/4 sweet onion
4 small sweet peppers
1/2 tomato
1 garlic clove, minced
1/3 cup fresh or frozen (and thawed) raspberries
1 tbsp salt
1 tbsp chili powder
3 tbsp lemon/lime juice
1 tsp sugar
1 tsp olive oil

1. Chop the onion, peppers and tomato and mix in a bowl
2. Add the garlic, and raspberries (halved) and mix again
3. In this order add: olive oil, lemon/lime juice, sugar, chili powder, salt
4. Mix and add salt and chili powder as needed to taste
5. Serve chilled with homemade tortilla chips (cut up tortillas baked for 5 minutes at 350)
